Recipe: Bean Salad

Recipe: Bean Salad

kitchen
A Gluten-free, Dairy-free Whole Food Recipe
This dish is absolutely delicious as a side dish or as a salsa to scoop up with corn chips. I think you’ll enjoy the tangy sweetness of this protein-packed, easy-to-make dish.

Ingredients:
Several celery stalks, diced
1 onion, diced
1 can black-eyed peas, drained and rinsed
1 can pinto beans, drained and rinsed
1 can black beans, drained and rinsed
1 cup frozen sweet corn, cooked
Sea salt to taste
1/2 cup unrefined olive oil
1/3 cup apple cider vinegar
1/8 cup agave nectar
Directions:
Combine all ingredients in a large bowl except for the olive oil, apple cider vinegar and agave nectar.
Combine the olive oil, apple cider vinegar and agave nectar in a sauce pan and heat. Taste and adjust ingredients to your liking. Remove immediately when it first starts to boil. Allow this sauce to cool thoroughly and gently toss over the beans and veggies mixture. Serve at room temperature.

Recipe: Power Juice

Recipe: Power Juice

A Gluten-free, Dairy-free Whole Food Recipe

Do you need a convenient, quick way to fit in five fruits and greens? Look no further. This is delicious and takes about 6 minutes to make. Your body will thank you.
Ingredients
1 cup fresh or frozen cranberries
1 orange (peeled)
1 pear (an apple works well, too)
Juice of 1/2 lemon
2 collard green leaves
2-3 mint leaves
1 banana
1 cup of coconut water*
Several ice cubes (if not using frozen cranberries)
Simply blend all ingredients and enjoy! A high-powered blender is helpful for creating a smooth texture. Makes 2 servings.
*Coconut water can be purchased at your local coop or you can just use filtered water.

Recipe: Turkey Chipotle Chili

Recipe: Turkey Chipotle Chili

A Gluten-free, Dairy-free Whole Food Recipe
I’ve tried many chili recipes and I landed on this one as my favorite. It’s thick, flavorful and the bottle of gluten-free bear adds a great flavor. If you haven’t had your greens for the day, add some kale or spinach.
Ingredients:
1 large yellow onion, diced
2 carrots, sliced thin
4-6 cloves of garlic, crushed
3 TBS unrefined olive oil
1/2 to 1 tsp chipotle chili powder (based on the spice level you prefer)
2 to 3 tsp chili powder
2 heaping teaspoons oregano
2 tsp ground cumin
1 lb ground organic turkey
1 15-oz can of corn, drained
1 28-oz can fire roasted crushed tomatoes
1 15-oz can fire roasted crushed tomatoes
2 15-oz cans of mixed chili beans
1 15-oz can refried beans (Amy’s organic with green chilies works well)
1 gluten-free beer (Daura is a good brand.)
2 TBS honey
2 TBS red wine vinegar
1/4 to 1/2 cup chopped cilantro
Salt to taste (start with 1/2 tsp)
